Lemon Poppyseed Cream Cheese Cookies

I happily took part in Staci's Bake-N-Blog and decided to make Lemon Poppyseed Cream Cheese Cookies.  As you know, I am a sucker for anything with lemon and these turned out beautifully.  The only thing I added a dusting of powdered sugar when they came out of the oven.  They were light, flavorful and delicious!

4 oz cream cheese, room temperature
4 Tbsp butter, room temperature
1/2 cup granulated sugar
1/2 cup powdered sugar
1 egg
1 tsp vanilla extract
juice and zest from 1 lemon
1 cup flour
1/2 tsp baking powder
1/2 tsp salt
1 Tbsp poppy seeds

Preheat oven to 350. Cream together the butter and cream cheese. Add the sugars, egg, extract, and lemon juice. Sift together the flour, baking powder, and salt. Add to the wet ingredients and mix until just incorporated. Add the zest and the poppy seeds, mix until evenly distributed. Spoon the dough onto a cookie sheet lined with parchment or a Silpat; bake for 10-12 minutes at 350 degrees. The cookies will not really change color except on the bottom, so be sure to check the bottoms to make sure they’re not burning. Let cool on a rack and EAT!

Bon Appetit!
